oh my dutch baby, you are almost as great as a real baby
My husband and I made the (delicious) mistake of introducing pop tarts to our boys a few months ago. My kids LOVE them! They inhale them. In order to make myself feel better about that, I usually make them eat a banana or apple or yogurt with it. As if that somehow negates the amount of sugar they've just consumed. On school days, I give them oatmeal and fruit.. honestly, just in case their teachers ask what they ate for breakfast, they're impressed with how healthy my kids are!! (omg that's very embarrassing to admit). Anyway, on Saturdays, I love making big breakfasts which include all the basics: eggs, bacon, biscuits, waffles.. all of it. But mainly, I like switching it up. So, I started making dutch babies and OH MY WORD, they are a hit! And why not? They're basically massive pancakes. Bonus: They're so easy to make with minimal mess! Here's a basic recipe that we all found delicious. I adapted it from NYT cooking's recipe.
- 3 eggs
- ½ cup flour
- ½ cup milk
- 1 tablespoon sugar
- Pinch of nutmeg
- 4 tablespoons (salted) butter
- Syrup, mixed berries, confectioners sugar
- Combine eggs, flour, milk, sugar and nutmeg in a blender and blend till smooth. Note: This can also be done by hand.
- Place butter in a heavy 10-inch skillet or baking dish and place in the oven. As soon as the butter has melted (watch it so it does not burn) add the batter to the pan, return pan to the oven and bake for 20 minutes, until the pancake is puffed and golden. Lower oven temperature to 300 degrees and bake five minutes longer.
- Remove pancake from oven, cut into wedges and serve at once topped with syrup, mixed berries, confectioners sugar.
